Gluten Free Baileys Brownies

I wanted to start testing new gluten-free recipes for this summer’s farmers market.   I continue to get more requests for bake goods that are gluten-free, so I was on the hunt for the perfect treat.   I have an amazing recipe for a flour-less chocolate cake, so a brownie recipe seemed like a logical next step.  Since it was also close to St Patrick Day I thought it couldn’t hurt to add Baileys Irish Cream.  How  could it possibly be bad if I added this amazing liquor.


Ingredients – Brownie

2 ½ cups icing sugar

2 cups ground almonds

2/3 cup unsweetened cocoa powder

1/8 tsp salt

4 egg whites

2 tsp vanilla

2 tab Baileys Irish Cream Liquor

1 cup bitter-sweet chocolate chips



Pre-heat oven: 350F

  1. Line a 8×8 pan with parchment, letting it hang over the edges of pan
  2. In a large bowl and sugar, almonds, cocoa, salt
  3. In a small separate bowl add egg white, vanilla, liquor and mix slightly
  4. Add wet ingredients to dry – note batter will be very thick
  5. Add chocolate chips
  6. Pour into prepared pan and bake for 35-45min or until toothpick comes out clean

Ingredients – Ganache

1 cup heavy cream

3 cups bittersweet chocolate (70% cocoa)

¼ cup Baileys Irish Cream

Green/White Sprinkles



  1. In a medium bowl add chopped chocolate – set aside
  2. In a small saucepan add cream and heat to just below simmer
  3. Pour cream over chocolate and let sit for 4min
  4. Stir cream and chocolate until smooth and glossy
  5. Add liquor and mix until combined
  6. Pour ganache over cooled brownies and spread evenly with an off-set spatula
  7. Sprinkle decorations immediately over ganache if using

These brownies are so simple.  They are easy and very quick to whip up, plus they have the added bonus of being gluten-free.  You can omit the Baileys if you choose, but it does add a nice flavour complement to the almond.  If you are short on time you can also omit the chocolate ganache, although I highly discourage you to do so, as this was my favourite part of the brownie.  Well I think I have found an excellent recipe for all those gluten-free fans that visit the farmers market.
